There is a place called "Kök" on Calle San Luis, where cooking workshops are organized. Kok teaches the cuisine of many countries. During the month several workshops are organized, I recommend visiting its website: www.koktucocina.com
The place is charming and on weekends they serve a Brunch, which is terrific.
Here are some options for cooking classes in Seville
Taller Andaluz de Cocina
This class is located inside the Mercado de Triana which is right across the Puente Isabel bridge as you cross over from the historic centre. It lasts about 3 hours. When you arrive you first shop for ingredients in the same market, and eat after you cook.
Taller Andaluz de Cocina also does Tapas classes as well as a market tour, and sherry tastings, in addition to cooking classes. I am told that the chef used to work at a high end restaurant before branching out into teaching the local cuisine.

Cooking Ole is located in the historic centre, in the Santa Cruz district and very close to the Cathedral.
It covers Spanish cuisine as a whole and aims to teach you to cook an entire meal including dessert. They also do Tapas classes.

The main expertise of Paladar y Tomar is to provide wine tourism around the region but the cooking class is also nice. The menu is decided by the participants and the class is in a local home. They also run gourmet tours and classes all over other parts of Spain.
